Ganesh Chaturthi 2022: The special day is almost here. Ganesh Chaturthi is celebrated every year with a whole lot of grandeur and pomp across the country. Also known as Vinayaka Chaturthi, Ganesh Chaturthi celebrates the arrival of Lord Ganesha on earth from the Kalish Parvat with mother Goddess Parvati. On this day, people deck up in new clothes and keep fast to worship the lord. This year, Ganesh Chaturthi will be celebrated on August 31. Ganesh Chaturthi is also famous for all the lip-smacking dishes prepared to be distributed among families and friends.

Ghugni

Ingredients:

For Boiling

White Peas Dried – ½ Cup Dried (½ Cup After Soaking – 1 Cup/205gm)

Onion – ¼ No

Green Chillies – 1 No

Water – 2½ Cup

Salt – To Taste

Turmeric – ½ Tsp

For Bhaja Masala

Green Cardamom – 3 Pc

Fennel Seeds – 1 Tbsp

Cumin – 1 Tbsp

Coriander Seeds – 1 Tbsp

For Masala

Mustard Oil – 3 Tbsp

Dried Red Chilli – 2 No

Green Cardamom – 5-6 No

Cinnamon – 1 Inch Pc

Bay Leaf – 2-3 No

Cloves – 4 Pc

Cumin Seeds – 1 Tbsp

Onions (Thinly Sliced) – ½ Cup

Green Chillies, Chopped – 1 Tsp

Ginger Garlic Paste – 1 Tsp

Potatoes (Small Cubes) – ½ Cup

Turmeric – 1 Tsp

Chilli Powder – 1 Tbsp

Cumin Powder – 2 tsp

Coriander Powder – 1 tbsp

Tomatoes, Diced – 1 Cup

Salt – To Taste

Green Chillies, Slit – 1 No

Bhaja Masala – 1 Pinch

Ghee – 2 tsp

For Garnish

Tamarind Water – 4-5 tbsp

Onions, Chopped – Handful

Green Chillies, Chopped – To Taste

Coriander, Chopped – Handful

Sev – Handful

Lemon – ½ No

Method:

Add white peas, onion and green chilli, water and seasoning in pressure cooker and cook for one whistle in high flame and around 4-5 whistles in low flame. Then prepare the Bengali garam masala by roasting all the masala together and grinding into a fine puree. Then, in a kadai, add mustard oil, whole red chillies, green cardamom, cinnamon, bay leaf, cloves and cumin and onions together. Stir everything together and add chopped green chilli and ginger garlic paste. Add the cubed potatoes and roast together till the onions turn light brown. Now add turmeric, red chilli powder, cumin powder and coriander powder with the tomatoes and salt. In the end, add the boiled peas and roast together for around 3-4 minutes. Add in the garam masala and a pinch of ghee for the aroma. Garnish with imli water, chopped onions, green chilli, coriander, sev and a slice of lemon.

Kothimbir Vadi with Hare Pyaz Ki Chutney

Ingredients:

For Badi

Coriander (roughly chopped) – 3 cups

Besan (chick pea flour) – 1cup

Salt – to taste

Chilli powder – ¾ tsp

Turmeric – ½ tsp

Garam masala – ½ tsp

Green chilli chopped – 1no

Cumin powder – 2 tsp

Sugar (optional) – 1tbsp

Heeng – ½ tsp

Til (Sesame) – 3tbsp

Lemon – ½ no

Rice flour – ¼ cup

Water – 3-4tbsp

Oil – 1tbsp + ½ cup

Hare Pyaz Ki Chutney:

Spring onion chopped – 2 cups

Mint – ½ cup

Coriander – ½ cup

Green chilli – 1no

Ginger chopped – 2tsp

Black salt – ¾ tsp

Salt – to taste

Chaat masala – 2 tsp

Lemon – 1no

Curd (thick) – ½ cup

Ice Cubes – few

Water – a dash

Method:

Clean the chopped coriander leaves and add besan, salt, chilli, turmeric, garam masala, green chillies, cumin sugar, heeng, til, lemon, rice flour and water. Mash everything together with hands. Then, as it forms the dough, drizzle some oil and keep aside. Then take a glass bowl and apply a little oil and place the dough in it. Steam it in the steamer for around 15 minutes. Then upturn the dough and cut it into squares. Shallow fry the wadis till they turn light brown. Meanwhile. Prepare the hare pyaz ki chutney adding all the ingredients to the mixer grinder and making a fine paste. Serve the wadis with the chutney.
